Saint-Romain is one of those villages, a sunny amphitheater hidden behind a series of higher hills in the Côte de Beaune. This picturesque hamlet with its high-altitude vines is where the next-generation of native sons have had enough of secrets, and are ready to display their treasures and talents to a wine-thirsty public.
Granted, there have been Barolet family members tilling the racy limestone soils of Saint-Romain since the 1500s. The marriage of Andre Barolet and Huguette Pernot, a talented winemaker in her own right from the sprawling Pernot family in Pernand-Vergelesses, added more land plus a hyphen to the domaine in the late 1950s when family vine growing and winemaking began in earnest.
Yet it is Romain Barolet-Pernot, the family’s fourth generation, who in a few short years has turned this modest winery into one of the region’s up-and-coming stars. The best grapes (usually sold to Olivier Leflaive) came back into the family’s tanks and Francois Freres tonneaux; a more organic approach in the fields has transformed these wines to better reflect Saint-Romain’s fresh, high-altitude terroir, like a polished mirror.
Domaine Barolet-Pernot remains a micro-domaine, with just a few acres of land in both Saint-Romain and Pernand-Vergelesses, and some selections can be limited to a single barrel. But what Romain and his team do produce is worth seeking out, to discover the intensity and joyful vibrancy of the real Saint-Romain that’s finally out of the shadows.
FARMING & WINEMAKING
The family cultivates some 35 acres of vineyard land, in Saint-Romain, Beaune, Auxey-Duresses and Puligny-Montrachet. Vines are cared for as close to organic principles as vintage conditions allow; the estate is not certified.
Grapes are harvested by hand. In 2016, just after Romain took the reins at the estate, the family built a new cellar complete with new stainless steel, thermoregulated tanks. Chardonnay is pressed slowly and gently full-cluster, gravity settled, and fermented on indigenous yeasts in either French oak tonneaux or tank, around 20% to 50% new oak is used.
Pinot Noir is destemmed, cold macerated for three to four days, and fermented on indigenous yeasts. Red wines are aged for 11 months in barrel, with 20% to 40% new oak used. All wines are lightly filtered before bottling, with few added sulfites.
Saint-Romain Blanc
Chiseled, vibrant, endlessly bright — this is Saint-Romain’s secret, high up in the hills of the Côte de Beaune! A blend of small parcels from the village, this pure Burgundian Chardonnay delivers a stone-fruited fleshiness and oyster-shell freshness that is irresistible. Aged in a combination of older oak tonneaux and steel tank.

Saint-Romain Blanc 'Sous le Château'
‘Sous le Château’ is Saint-Romain’s top vineyard, a perfect plot on a very steep slope that faces mostly east/southeast on white, stony soils that give this wine its delicious nervous edge and heady, wildflower aroma. Fresh ginger and crushed stones, bright apricot and lemon glaze.

Saint-Romain Rouge
This classic and pure Pinot Noir from high-altitude Saint-Romain is a delight, with its crunchy red berry fruit and splendidly juicy core. Fine-grained tannins and a fresh, wildflower finish demand an air-dried saucisson and plenty of Comté.
