Baldoria Vermouth
Boves | PiedmontErnest Spirits founders Daniel Schmidt and Dotan Shalev connected with Master Distillers Piero Nuvolini and Enrico Giordana and set out on a journey “to bring vermouth into the 21st century.” They planted wormwood and other botanicals, went searching for good wine, and began to tinker. They tinkered, tasted, then tinkered and tasted some more, until they had an amazing product. Baldoria was born!
The Italian name Baldoria, which effectively translates to “conviviality,” highlights vermouth’s grassroots history, and respect for the creativity and dedication of the native artisan producers. They’re giving Vermouth a purpose and place on the shelf in its own right as a “stand-alone” spirit, as well as a cocktail and culinary ingredient for the bar, restaurant, home chef, and weekend bartender.
Produced in Boves, in the Piedmontese province of Cuneo, Baldoria is crafted with the best wines Piemonte has to offer. The botanicals are grown in-house on a 10-acre plot of land adjacent to the Ernest distillery without the use of pesticides or herbicides. The botanicals not grown in-house are foraged in the foothills of the Alps, a collaboration between Ernest and the local Alps community in an effort to promote the protection of local nature and landscape conservation.
Ernest is the products offshoot of Little Red Door, the acclaimed cocktail haven in Paris’ Marais district. Founded in 2012, Little Red Door is globally recognized as one of the world’s best cocktail bars. Vermouth Dry
A classic dry Vermouth based on Chardonnay wine, with grapes grown and vinified in Piedmont. Separate macerations of botanicals in grain neutral spirit and water, and in wine. Aging in steel tanks followed by light filtration and bottling. Some natural sedimentation is common across varieties. Essential ingredients include wormwood (artemisia vallesiaca; artemisia absinthium); sage; iris; genepy; fennel; ginger; sweet orange; lavender. ABV 18%

Vermouth Bianco
A sweet white Vermouth based on Chardonnay wine. Separate macerations of botanicals in grain neutral spirit and water, and in wine. Aging in steel tanks followed by light filtration and bottling. Some natural sedimentation is common across varieties. Essential ingredients include wormwood (artemisia vallesiaca); sweet orange; genepy (artemisia mutellina); lavender; cinnamon; clove; macis (myrstica fragans); gentian. ABV 18%

Vermouth Rosso
A lightly sweet Rosso Vermouth incorporating both Chardonnay and Nebbiolo wines from Piedmont. Separate macerations of botanicals in grain neutral spirit and water, and in wine. Aging in steel tanks followed by light filtration and bottling. Some natural sedimentation is common across varieties. Essential ingredients include wormwood (artemisia vallesiaca; artemisia absinthium); sweet & bitter orange; savory (satureja hortensis); malt; star anise; cinnamon. ABV 18%

Vermouth Bitter
A semi-dry, Bitter White Vermouth on a base of Chardonnay wine, grown and vinified in Piedmont. Separate macerations of botanicals in grain neutral spirit and water, and in wine. Vermouth Rosé
A semi-sweet Vermouth on a base of Piedmontese rosé wine (a blend of Dolcetto, Barbera, Freisa and Croatina). Separate macerations of botanicals in grain neutral spirit and water, and in wine. Vermouth Amber
A semi-dry Vermouth on a base of skin-contact “orange” wine produced from Rkatsiteli grapes in the Republic of Georgia. Vermouth Verdant

Vermouth Dry Umami

Macerating Porcini mushrooms with kombu seaweed has resulted in a unique, full-bodied, and convincing dry “umami” Vermouth. Aging in steel tanks followed by light filtration and bottling.
